Mexican Churros

It was a lovely Sunday morning, Buddy Camie and I head to the home our adorable Ms Fuzi ( founder FUZI Magic - Building Bridges of Goodwill )  to prepare on  our very own snack  Churros base on Fuzi memory of her late grand mother's recipe.  Armed with this recipe  we will conduct cooking demo on this churros to the children at orphanage.

Healthy Kiwi fruits and Banana Sandwiches with Alfalfa Sprouts

It is a Healthy  and nutritious as can be!

Soy Milk Prawn Fritters (Susu Soya Cucur Udang)

Here is my 4th post with Soya Milk as one of the ingredients which I am linking to Zoe's Little Thumbs Up event for October month.  My two other posts are Sea Cucumber Fish Maw Bean curd Soup and Bean Curd Cake with Black Sesame .

Soya Milk Prawn Fritter  (cucur udang) a popular snack among Malaysian.  They are many pre-mix  prawn fritter (cucur udang) with different brands are easily obtain off the supermarkets and grocery shops.

Ajinomoto (Malaysia) Berhad had sponsored a Charity Student Development Program  initiated by Fuzi Magic for Orphanage.  The program consist of 3 cooking demonstrations between June to August 2013, it was a great success.  I  am proud to be  one of the volunteer for this  charity program.    Prawns  Fritters ( cucur udang in Bahasa Malaysia) is one of the dish taught.  I would like to take this opportunity to thank Chef Kak  Baiyah of Ajinomoto for the great recipe.

 Don't worry there are still many crispy prawns behind the scence!

Chilled Tau Fu Fah 冷冻豆腐花

How about Tau Fu Fah with a twist?  Chilled with cooling sensation rather a tradition warm Tau Fu Fah?   Instead of using the lime powder, we used agar agar powder!  
The most important is it is super easy to prepare! That give  you the urge to want to prepare this cooling desserts for you, your family and family to enjoy right?
As for me I still prefer the warm tau fu fah,  but youngster and children just love the chilled Tau Fu Fah!  In short, the choice are yours! 

 



 You can actually see the Tau Fu Fah tremble when shake the plate!  ^_^

Home Made 'Pizza" Bread

Updated 29th June 2015 done some shortcut quick and easy pizza bread to fill the hungry stomach.  If you like to Pizza Bread,  I am sure you will like the Easy puff pizza Patry as well. 

 A more colourful and appealing pizza bread with fillings of  yr choice.



I used to buy pita bread from Mediya for my home made pizza, this because I found their pita bread very soft in texture compare to other brand, but was told Mediya no more produce pita bread as the machine for making it was down and beyond repair. Mediya decided to stop producing pita bread since. Here we are using just white bread or whole meal bread to spread whatever topping we desire and make our own, and much healthy 'pizza' bread.

These DIY 'pizza bread' is prepared by Tammie from A to Z. I just gave her the idea.

This is an as easy as ABC to prepare snacks/breakfast/lunch for the whole family! So make it a joint family effort, get your children to involve to create their own topping of their choice. Children not only enjoy doing it, they will love and enjoyed yummy 'pizza' prepared by themselves. This is great, don't you think so? This will further strengthen family bond. Can imagine the fun you and children enjoyed!

Ingredients

White bread (how many you decide) I used whole meal bread
some butter to spread on the bread
Tomato sauce to spread on the bread (Optional)- We omitted this because of my children preference.
Mozzarella shredded cheese

Toppings - Unlimited choice to your family liking)

To name some of the topping -

ham chips, sausages, bacon button mushroom, chopped big onion, bell pepper of different color, crab stick and all other you can think of...........
You may refer my earlier tuna fish sandwiches as toppings to make it more adventurous!

Method

  1. Spread butter over the bread
  2. spread another layer of tomato sauce
  3. Top with the topping of your choice
  4. Lastly spread mozzarella shredded cheese onto the topping
  5. Bake in a preheat oven till you can see the cheese oozing out, or some prefer to brown the cheese for more crispy and crunchy bites.My advice is try for cheese oozing out then the crispy, and determine which one your family prefer.
  6. The time really depend on what you prefer Baking duration . ...err....says.... 10 mins or so plus and minus.
  7. Tada....... The hot 'pizza' breads are ready for the whole family to enjoy!

Home made Shanghai Pancake 上海窝饼




Place and spread the red bean paste evenly onto half of the pancake.

Fold the pancake and put with little batter on the edge to seal it. Important tips : Poke some holes with a fork to release air bubbles.


This DIY home made shanghai pancake is merely for home consumption, it is no way to compare with the restaurant type of Shanghai Pancake, which is a more tedious process, making 2 type of doughs. Mine is much simple and easy for those home maker as lazy as me, sorry! no offend arh! hehe.........

Recipe

Ingredients

3/4 cup flour
1 tbsp rice flour
1 egg
1 tbsp oil

Filling:

some ready to use red bean paste ( which can easily obtain from bakery shop.)

Method

Put both flour into a bowl. Add egg and mix Pour in water little by little. Mix into batter. Set aside for 20 minutes.
Heat a non stick frying pan with little oil. Pour a ladle of the batter and swirl the pan to spread evenly. Fry into a thin pancake. Dish up.
Spread some red bean paste onto half the pancake as shown in the photo.
Fold the pancake and seal the seam with some leftover batten.
Use fork to poke a few holes to release air bubbles.
Heat oil in frying pan. Shallow-fry the pancake until golden brown and crispy. Dish up and cut into pieces. Serve.

Note:

Nowadays red been paste can be easily obtain from shops, saved us a lot of trouble to prepare paste which is quite a tedious task.

Will make this pancake again to improve further as my family love this snacks, so stay tune for my next venture!

上海窝饼

材料
面粉 3/4杯
粘米粉 1汤匙
鸡蛋 1粒
生油 1汤匙


馅料
现成红豆沙 (烘焙店可找到)

做法
把面粉和粘米粉放入碗中, 加入鸡蛋搅拌。逐少加入水,拌匀成粉浆,静置20分钟。
烧热平底锅,灒油,倾入适量粉浆蕩匀,煎成薄饼,盛起。
将适量红豆沙铺于一半的薄饼如上图。
把薄饼折半,用少许粉浆埋口。
叉几个洞在薄饼把空气放出。
烧热油在平底锅,下薄饼,半煎炸至金黄色及酥脆。上碟切件,即可品尝。

Potato Crabmeat Patties 马铃薯蟹肉饼


A very interesting and delicious snack.

Recipe adapted from Amy Beh of Cook's Nook, Star paper.
I have made some amendment on the original recipe

Ingredients

250 potatoes
45g cooked crab meat (can be replaced by prawns)
50g shredded carrot
2 white button mushrooms, finely diced
1 tsp oil
40 g diced onion
1 tbsp chopped spring onion
1 tsp chopped red chili
salt and pepper to taste
1/2 tsp chicken stock granules ( I omitted and use 1 tbsp of oyster sauce and 1 tsp of fish sauce)
1 tsp cornflour ( I use 1 tbsp to make the patties firmer)

Method

Scrub potatoes clean and place in a saucepan.
cover with water and bring to the boil then reduce the heat and simmer for 20 to 25 minutes or until potatoes are cooked and tender.
Drain and leave to cool. Peel and mash the potatoes.
Heat oil and saute onion, carrot and mushrooms. Add salt, pepper and chicken stock granules. Dish out the mixture and leave aside to cool then mix with mashed potatoes, crab meat, spring onion and chili. Add cornflour to mix.
Divide potato mixture into equal portions. Shape each into a pattie. Pan fry patties for 2-3 minutes each side or until golden and heated through.
Serve with chili sauce and mayonnaise.

Tips

My own version of making the mayonnaise dipping -
2 tbsp mayonnaise
1/2 tbsp condensed milk
1 tbsp or to adjust lemon juice.
Mix and combine the above.
Tada! The sauce is ready!

Dim Sum - Siew Mai 燒賣

It has been a long time since I last made Siew Mai for my family. My children commented that because of facebook that inspired me to be enthusiastic again to prepare different type of foods for the family. They thanked facebook for it. How you like that?! hehe......
It is a satisfying bite of each siew mai.
Here is the recipe.

Ingredients

200gm minced pork
150gm prawns -shelled and minced ( I prefer to chopped into pcs)
3 dried mushrooms - soaked, and chopped finely
3 water-chestnuts, chopped finely
2 tbsp of chopped spring onions

Seasoning:
1/2 tsp salt
1/2 tsp sugar
1 tbsp fish sauce
pepper
1 tesp sesame oil
1tbsp cornflour
1 egg

30-35 pcs wantan skin, trimmed into neat round shape

Topping
1 tbsp finely chopped carrots or 2 steamed salted egg yolks

  1. Combine mined port and prawn meat with salt, fish sauce, sugar and pepper, Mix well until mixture turns sticky. Add mushrooms, water-chestnuts and spring onions. stir in sesame oil and cornflour. Mix well. Lastly add the egg and blend well.
  2. Chill filling in the fridge for at least 30 mins.
  3. Put a pc of wantan skin on top of your thumb and index finger. Add 1 full teaspoon of filling in the center. Bring the edges together with the back of the teaspoon. Press down the filling and smooth the surface. Flatten the bottom so that Siew Mai sits properly.
  4. Place the Siew Mai on a greased steaming bamboo basket. sprinkle with a little carrot to garnish.
  5. Steam Siew Mai over high heat for about 10 to 12 minutes. Remove and serve hot with chilli sauce.

Home made Popiah

Popiah ~ My favorite food. The old lady I used to order popiah skin finally decided to call it a day. I have been searching for the replacement for thin and soft texture of popiah skin for some time. My best friend Annie (crazy with popiah like me) found another seller at Pudu market, which I go every week. So near yet so far!
We usually have popiah for lunch and popiah for dinner with friends at my place on sunday or public holidays.

Pie Tee (Top Hats)

Pie Tee is a popular nyonya  finger foods for party and gathering.
The ingredients for the fillings is up to individual liking with no boundaries
But making of pie tee case is tedious and time consuming, u need a lot of patient to deep fry the case with the special mould one by one. This finger foods snap up in no time.





The mould to make Pie Tee case


Ingredients for the Pie Tee Batter

180 rice flour 
60 gram plain flour
30 gram cornflour
1 egg
1/4 baking powder
salt to taste
400 ml water 

  1. Mix all the ingredients together in batter and strain.  Set aside for 1/2 hour.
  2. Heat enough oil for deep frying in a wok.  When the oil is hot dip the pie tee mould into the oil for a while, then into batter to coat the mould.  Then into the oil again.  
  3. Once the pie tee case almost set, shake and jerk the mould to loosen out the casing, continue to fry the case till golden brown. 
  4. Dish out onto absorbent  paper.  Repeat the process for the rest of the batter. 
  5. Store in cooled pie tee case in air tight container for later use.

 As for the filling:

You may add in any fillings of your choice.

For example -  Blanch bean spouts, shredded cucumber, carrot, lettuce, prawns, sesame seeds  etc etc
Fry some shredded sengkuang with  minced meat or dry cuttlefish which is best to go with pie tee.
