Malaysia Popular Dish - Nasi Lemak with Sambal Ikan Bilis 班兰参巴椰浆饭

Nasi Lemak is basically a  fragrant rice dish cooked in coconut milk and pandan leaf commonly found in Malaysia, where it is considered the nation dish of Malaysia. 
Nasi lemak is traditionally eaten for breakfast but these days people are ordering it any time of day.
Sinful and bad for the heart but incredibly delicious.. If you eat this once in a while, it should be ok not so bad!



The nasi lemak consists of a hot spicy sauce (sambal), hard boiled egg, cucumber slices, small dried anchovies (ikan bilis) and fried  peanuts at its core and any other side dish you preferred.   Just to name a few  sambal cuttlefish, Ayam masak merah, cockle, stir fried water convolvulus (kangkong),  or beef rendang (beef stewed in coconut milk and spices).

This sambal Ikan Bilis (Anchovies cooked with chilli) is a must to go with nasi lemak.  Look appealing?    I love it!

 These heart shaped eggs are made by my daughter Tammie,  I have failed twice with my 2 attempts.  Too rough or  press to hard I broke the hard boiled eggs.    hehe....    For the making of heart shape hard boiled please refer a video clips  here


Fried Anchovies






I used Basmathi long grain and frangance rice for my nasi lemak.  The rice is so long and the texture is chewy and nice.  



The recipe was adapted from a charity cooking demo initiated by Fugi Magic and sponsored/organized by Ajinomota (Malaysia) Berhad on Living skill Development Programme to benefit  3 orphanage homes.   The cooking was demonstration by the chef from ajinomoto, after her demonstration, 6 groups will prepared  the dished taught at  cooking station at the venue.       A Big  Thank you to Ajinomotoa!!!

Recipe

For the Nasi Lemak

3 cups of rice  - washed and drained ( I used Basmathi long grain fragrance rice)
150 ml santan (coconut milk)
3 cups of water
1 tsp salt or to taste
4 pices of pandan leaves knotted. (I used  3 tbsp of pure pandan juice ( blend about 10 pandan leave with some water to extract/sieve the juice) 
3 slices ginger

Put all the above together in the electric rice cooker, stir it and cook the rice as usual.


Ingredients  for Sambal Ikan Bilis - all blend together with some water

1 big onion- chopped  (or 5-6  shallots)
50 gm of dried chillies (seeded and soaked)
10 gm belacan (shrimp paste) -  toasted

Other ingredients 

150 ml cooking oil
2 tbsp sugar or to taste
50 grms of Ikan bilies (fry briefly)
1 tabsp of Asam jawa without  seed mixed with 100 ml of water 
1 big onion (sliced) 
1 tbsp Tumix Pati Ikan Bilis  

Method  

Heat oil in a wok saute the blended ingredients using medium fire till oil seep out.  This will take at least 20 minutes.  
Add in the asam java juice, Tumix Pati Ikan bilis, big onion and sugar to taste.
Add in the fried ikan bilis and mix well dish out to service with hot nasi lemak.

Other condiments

3 hard boiled egg (cut into halved  or quartered) - For the heart shape egg, pse refer the above video
1 cucumber -  sliced
100grms groundnuts  - fried
50 gm Ikan  bilis (deep fried till crispy) 
Fried luncheon meat (Optional)

Arrange the Nasi Lemak, sambal Ikan bilis and other condiments and have hearty Malaysian meal.   



On the day of the above charity cooking demo, the group with 3 children lead by me are the winner of the best Nasi Lemak prepared among 6 groups that taking part in the hands-on live cooking.  Each of us received a thermos for our joint effort!    The judging  is base on the presentation  of food including the cooking of fried ikan billis, groundnuts, hard boiled eggs and cucumber cutting.

Irreissitable Super Moist Steamed Chocolate Cake # 2

For those chocolate cake lovers out there, I am pretty sure this Super moist Steamed chocolate cake not only  melts your mouths and it melts your hearts too.  
I demonstrated  the way to prepare this chocolate to the maid at my brother's house,  she would be able to make  this cake for  my brother's family especially for my father who is a chocolate lover. The result is not so moist  compare to the cake that I steamed again for Tammie's friends  (Matriculation Perak for the year 2012)    who came down to Kuala Lumpur for a short holiday.  They are very anxious wanted to taste  Tammie's mom home food.  Hi guys!  How you like Aunty Christine home made cake, give your comments, good or bad are most welcome!

Easy Puff Pastry Pizza

Dear all, if you are looking for an quick and  easy, simplest   version of DIY Pizza at the comfort of Home Sweet Home, you are at the right place.  This quick and easy pizza not only at par with any other pizza, it can be crispy and delicious too.  Even children can do it with whatever toppings of their choices with no limit.  An ideal snack and party dish as well.  Adults and children, old and young  will definitely love it.





The puff pastry pizza is so appealing to make you drooooollll........(ˉ﹃ˉ)



The pastry is not only crispy and its tasty too!

Oreo Cheese Cupcake 奥立奥芝士杯子蛋糕

Oreo Cheese Cup Cake!  Anyone??  My children will definitely love it!  Not forgetting Tammie's friends too...... Guys, too tempting to resist?

Place in the preheat oven of 150ºC for about 30 minutes


 Sharing with you my earlier posting of 2 Unbaked Oreo Cheese Cake  here and here.  After enjoying these fabulous cheesecake,  make an effort to burn the extra calories.  Don't blame me for the after effect that stay on your hips.......  LOL   You know what I mean  (^_^)

Recipe

Ingredients A
250gm cream cheese
2 egg yolk
50g fresh milk
Cream from 14 pieces of oreo biscuits
1 tbsp cornflour

Ingredients B
2 egg white
1 tsp lemon juice
1 tbsp castor sugar

Ingredients C
14 pcs of oreo biscuits, scrapped the cream and you have 28 pcs of biscuits

Method
  1. Assemble 14 paper cups in tart moulds,  place 1 pc of oreo biscuits at the base of the paper cups.  Put aside.
  2. Beat cream cheese till smooth, add in egg yolk to blend well, add in milk and the cream from the biscuits continue to beat till smooth.   Blend in the cornflour till well combined.
  3. Beat the egg white till foamy add in lemon juice continue mixing, add in sugar and beat till soft peak formed.
  4. Combine cheese batten and meringue  till well blended.
  5. Spoon batter in the paper cup till 80% full, place a piece of the oreo biscuit on top.
  6. Bake on preheat oven at 150 C, using water bath method for about 30 mins or till done.

奥立奥芝士杯子蛋糕  - Recipe from Katherine Kwa

材料:
A)250g奶油芝士(cream cheese)、2粒蛋黄、50g鲜奶、Oreo 饼干奶油淇淋(取之14片oreo饼干)、1汤匙粟粉

B)2粒蛋白、1小匙柠檬汁、1汤匙幼糖

C)14片oreo饼干,拆开取出淇淋。(就变成了28片饼干)

做法:
1)14个小纸杯是放在蛋挞模里,再放入一片oreo饼干在纸杯里,备用。
2)将奶油芝士打滑,加入蛋黄拌打均匀,加入鲜奶和奶油淇淋拌打至幼滑,再加入粟粉混合均匀。
3)蛋白放入盆中,用电动打蛋机打至起泡泡,加入柠檬汁打发,加入幼糖,拌打至湿性发泡。
4)将芝士混合料与蛋白混合均匀,倒入纸杯八分满,把另14片oreo饼干分别放在蛋糕表面,以150度,水浴法烤约30分钟至熟即可。
