Seaweed & Beancurd Rolls 紫菜卷



Accumulating quite a number of recipe yet to post onto my blog! My apology for those who follow and support me!

Here is the recipe of this healthy seaweed & Bean curd Rolls

3 sheets seaweed or nori
3 sheets bean curd sheets cut to the same size as the seaweed

For the Filling
200gm fish paste
100g shelled prawns (diced)
1 small carrot (grated)
100 gm yambean or sengkuang (chopped) I omitted this simply bcoz I don't it in my kitchen
4 chinese mushrooms (soaked, diced)
3 tbsp diced spring onions

Seasoning
1 tsp salt
1 tsp sesame oil
1 tsp caster sugar
1 tbsp fish sauce
2 tbsp cornflour
some pepper
1 tsp oyster sauce

For coating

2 eggs (lightly beaten)
1 cup sieved tapioca flour ( I used cornflour)

Method

  1. Combine filling ingredients with seasoning and mix into a sticky paste. Divide into three parts.
  2. Blush some egg onto a piece of bean curd sheet, then top with a piece of seaweed to stick both together. Spread in a part of filling, roll up and seal the edge with egg, repeat process.
  3. Coat the seaweed rolls with beaten egg and roll over tapioca flour. Deep-fry in hot oil till golden. Dish out, cut into pieces.
  4. Serve hot with chilli sauce and/or mayonnaise.

Chinese Spinach With anchovies 莧菜銀鱼仔

Green is a must have dish on dinning table in most Asian homes.
It is quite a challenge to make sure children eat vegetables. But if the greens cook a bit longer, the veges become more tender, children will learn to enjoy the dish. When stir-fired other green, it must be a quick stir-fried with fire on high otherwise the veges will be over-cooked turn yellowish and lost all the vitamins and minerals, but not this chinese spinash.
The Chinese spinash 莧菜 has various species, green, maroon colors as well. You may refer here for details. These greens is easily obtain from all markets. You can either to boil soup with it or just stir-fry, either way are go best with anchovies ( ikan billies).

1 bundles of Chinese spinach ( I normally goes for the young spinach) - cut and cleaned
2 tablespoon of small anchovies 銀鱼仔 - Deep fried and set aside
1/2 tbsp of kei chi
some smashed garlic
salt to taste
Fish sauce to taste ( when I use fish sauce I omit the salt)
2 tbsp of cooking oil

Method

  1. Heat oil in the wok, add in the garlic and fry till aromatic, add in the spinach.
  2. Stir fried a while add in some water continue to fry till quite soft
  3. add in the kei chi, salt to taste.
  4. Dish out and garnish with fried anchovies. Serve hot.

Potato Crabmeat Patties 马铃薯蟹肉饼


A very interesting and delicious snack.

Recipe adapted from Amy Beh of Cook's Nook, Star paper.
I have made some amendment on the original recipe

Ingredients

250 potatoes
45g cooked crab meat (can be replaced by prawns)
50g shredded carrot
2 white button mushrooms, finely diced
1 tsp oil
40 g diced onion
1 tbsp chopped spring onion
1 tsp chopped red chili
salt and pepper to taste
1/2 tsp chicken stock granules ( I omitted and use 1 tbsp of oyster sauce and 1 tsp of fish sauce)
1 tsp cornflour ( I use 1 tbsp to make the patties firmer)

Method

Scrub potatoes clean and place in a saucepan.
cover with water and bring to the boil then reduce the heat and simmer for 20 to 25 minutes or until potatoes are cooked and tender.
Drain and leave to cool. Peel and mash the potatoes.
Heat oil and saute onion, carrot and mushrooms. Add salt, pepper and chicken stock granules. Dish out the mixture and leave aside to cool then mix with mashed potatoes, crab meat, spring onion and chili. Add cornflour to mix.
Divide potato mixture into equal portions. Shape each into a pattie. Pan fry patties for 2-3 minutes each side or until golden and heated through.
Serve with chili sauce and mayonnaise.

Tips

My own version of making the mayonnaise dipping -
2 tbsp mayonnaise
1/2 tbsp condensed milk
1 tbsp or to adjust lemon juice.
Mix and combine the above.
Tada! The sauce is ready!

Fresh Mushroom with Broccoli 一团和气 (三菇燴西蘭花)

Another favorite mushroom dish

Ingredients

500 gm green Broccoli - florets
1 carrot - cut into desired shape

150gm Fresh mushroom

2 pkts enokitake mushroom 金針菇
150gm abalone mushroom
1tbsp chopped garlic

Seasoning
1 tbsp Lee Kum Kee soya sauce
pepper,
1 tbsp abalone sauce
2 tbsp Lee Kum Kee oyster sauce

bit of sugar

1 tbsp shao shin wine

1. Just boil some cut broccoli in boiling water with a bit salt and 1 tbsp of oil, dish out and arrange the broccoli and carrot nicely on a serving plate.
2. Heat some oil in the wok, add in garlic and saute till aromatic.
4. Add in fresh mushroom, abalone mushroom
5. Add in the enokitake mushroom 金針菇 and seasoning
6. Lastly add in some shao shin wine. Dish out and arrange in the center of the vegetables, serve hot.

With Chinese translation

500克 西兰花 -切塊

1胡萝卜-切成喜欢的形状

150克鲜蘑菇

2 包香菇金针菇 - 切根洗淨

150gm 鲍鱼菇

1汤匙蒜茸

2汤匙油

调味料

一汤匙李锦记酱油,

胡椒粉少許

1汤匙李锦记鲍鱼汁

2汤匙李锦记蚝油

1糖半茶匙

1汤匙紹兴洒

1。煮沸水,加一茶匙盐1汤匙油,放入西蘭花和胡萝卜煮熟,捞起, 排在一个碟 上。

2. 烧热油镬中,加入蒜茸爆香。

3.加入鲜香菇,鲍鱼菇, 加入调味料

4. 加入金針菇

5.最后加一1汤匙紹兴洒。

6. 起鍋, 排在碟的中间,趁热上桌。

鲜菇本身含有水份,所以不用加水

這是一道健康好味, 老少闲宜的菜肴

螞蟻上樹 Lettuce wrap

Do you think it looks like (螞蟻上樹 ) ants climbing the tree? hehe...




This dish was inspired when Hubby and I with some friends dined at Purple Cane.
The name of the dish is 螞蟻上樹 (literally means ants climbing the tree) but cant remember what is the name in English; literally translation is 'ants climbing on to the tree. I should break the fried mee hoon into smaller pieces so that they looks like ants. To eat, just put the fillings and fried mee hoon on the lettuce, wrap it and dip with chille sauce n 'wallop'.

To prepare -

Deep fry some mee hoon and break into small pieces.

Put some oil in the wok, add minced garlic, add cubed prawns (seasoned with fish sauce, sugar and pepper, a bit of cornflour), cubed taufu, carrot, mushroom etc or any veg or ingredients of your liking, stir fry a while, add seasoning, oyster sauce, salt to taste.
Arrange the lettuce, fried mee hoon and mee hoon resemble 螞蟻上樹 and serve.
