Lemongrass, Lemon, Ginger, Honey (or sugar)
5-6 stalks of lemongrass use the white part only (smashed)
Juice of 1 lemon
1 knob of freshly grated ginger
8 cups of water 4 pandan leaves - knotted
Honey to taste
Thin slices of lemon for garnish
In a pot bring water to a boil. Add lemongrass, pandan leaves and ginger, simmer gently for about 20 minutes.
Add in Lemon juice.
Strain and stir in honey to taste.
Garnish with lemon slices.
Or another option for serving is to chill thoroughly and serve on ice with thin slices of lemon slices.
