Thai Spicy Pandan Chicken 泰式香兰鸡

Pandan leaves wrap with chicken is a popular dish at most Thai Restaurant.
The wrapping of the chicken meat with the pandan leaves can be fun, once you get the momentum of the trick. My 'partner' was not around to video taped the wrapping of the chicken, ^_^ You may opt for a much easier way is to use tooth pick to faster the pandan leaves wrapped chicken.

What you need

2 deboned chicken thigh - diced ( you may used chicken breast)
Oil for deep frying
pandan leaves - washed


5 coriander root - washed and pounded
1 clove garlic - peeled, cleaned and pounded
1 tbsp oyster sauce
1 tbsp fish sauce
1 tbsp cooking wine
some sesame oil
some Thai chilli powder
some brown sugar/honey
dash of pepper


Marinate the chicken cube with seasoning for 2 - 3 hours.
Steam the wrapped pandan chicken in boil water for about 10 minutes
Heat up the oil to deep fry the chicken till cooked.
Serve. Unwrap the chicken and enjoy the aroma and flavor the pandan chicken.

Dipping sauce

2 tabsp water
2 tbsp sugar
3 tbsp soya sauce
1/2 tsp dark soya sauce
some toasted sesame seeds

Put all the ingredients in a sauce pan and cooked till sugar dissolved. Sprinkle with toasted sesame seeds.


The Pandan chicken can be baked in the over for a more healthy way of cooking.
