Simple Orange Butter Cake 香橙奶油蛋糕



A  very basic and simple Orange Butter cake specially baked for hubby. He does not fancy cheese cake unlike my 3 children. As for me, I prefer healthier cakes with less butter, less sugar and less cream.  A family of 5 with different likings, the task of cooking and baking in the house is no easy task!   Many of you  agree with me 100%.  Right?

Recipe source from good friend  Winnie Tan's  Orange Butter Cake  in Chinese version.

Ingredients 

250 gms butter
230 gms castor sugar  (I used 180gm only)
4 eggs
100ml orange juice
1 tbsp orange zest 

250gm self raising flour
30gm almond powder
1/2 tsp baking powder
 Method

  1. Preheat oven to  170° C
  2. Cream butter and sugar until creaming  and fluffy about 2 to 3 mininutes
  3. Mix in eggs slowly a little by  little.  If the mixture curdles, add 1 tbsp of flour and continue mixing.
  4. Add in sieved  flour mixture in 3 parts alternating with orange juice on low speed till well combined.
  5. Add in the orange zest and mix well.
  6. Pour the batter in a 9" greased  cake pan  and level the top with spatula.
  7. Bake  for about 40 minutes till golden brown or insert cake tester comes out clean.
  8. Allow the cake to cool completely before slicing.

  1. Hi! I like plain cakes too without any frosting, don't want to add more calories to an already calories loaded cake lol! This should be nice with the almond meal in it!
