Traditional Stir Fried Pork Belly with Ginger

 Grandmother's  old fashion recipe!

This traditional home cook dish is my family all times favorite during our childhood time.  Luckily I managed to learn  this  tasty recipe from mom when I was young!  
And now  is for my own family to enjoy the dish!  Whenever this dish to be served on dinning table,  its a must to cook extra rice.  (^_^)
Children will go for the fatty and lean meat, as for me have to settle with the lean meat without feeling guilty!


Ingredients  ( In actual fact, I don't have the exact amount of ingredients, everything is 'agak agak' (estimate), the old fashion way! ^_^

600 gms pork belly (3 layer pork) -  Cleaned and sliced into pcs
200 grm young ginger  - Washed, cleaned and sliced
2 tbsp of minced garlic

Marinate
2 tsp of aromatic spice

Seasoning
 1 tsp of oyster sauce
sugar to taste
2 tbsp cooking oil
2 tbsp Shao Shin wine (chinese cooking wine)
some dark soya sauce

Method
  1. Marinate the sliced pork belly with aromatic spice for about  an hour
  2. Heat oil in the wok, add in the sliced young ginger, stir fry a while add in the garlic, continue to fry till aromatic.
  3. Add in the pork and continue to fry for 5 mins or so, add in oyster sauce, dark soya sauce, sugar continue to fry till the meat is cooked.
  4. Before dishing out, sprinkle  the Chinese cooking wine and give it a quick stir.  Done
  5. Serve with hot rice.

Cooking tips

If you like, you may add in some dried chillies to make the dish more spicy
